Blue Pete's Sweet Potato Biscuits

Ingredients

  • 2 to 3 medium sweet potatoes
  • 1/2 cup butter or margarine
  • 1/2 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • 4 1/2 teaspoons baking powder

Instructions

  1. Boil, peel and mash potatoes. While potatoes are still hot, measure 1 1/2 cups into a large bowl. Add butter, sugar, salt and milk; mix well.
  2. Sift together flour and baking powder; add to potato mixture. Work with hands to make a soft dough. Chill dough.
  3. Roll dough out and cut into biscuits.
  4. Bake on greased cookie sheet on top shelf of 400 degree F oven for 15 to 20 minutes until golden brown.
