Cafe Tu Tu Tango Rum and Coke Cured Pork

Ingredients

  • 1/2 cup rum
  • 3 cups coke
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1/2 cup kosher salt
  • 1 pork tenderloin, cleaned

Instructions

  1. Combine kosher salt, brown sugar, honey, rum and coke until completely dissolved.
  2. Marinate pork tenderloin for 48 hours before grilling.
  3. Cut into 2 inch medallions, and grill for 5 to 7 minutes per side.
