Lea's Lunchroom Sweet Potato Pie

This pie is good with toasted, chopped pecans on top or with whipped cream.

Lea's Lunchroom Sweet Potato Pie

Yield: 1 pie

Ingredients

  • 1 1/2 cups cooked mashed sweet potatoes
  • 2 tablespoons soft butter
  • 3/4 cup light brown sugar
  • 3 large eggs
  • 1 cup evaporated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon cinnamon

Instructions

  1. Cream butter and sugar together.
  2. Add eggs.
  3. Add salt and spices.
  4. Add evaporated milk and mashed sweet potatoes.
  5. Bake at 425 degrees F in a 9 inch unbaked pie shell until firm.
