Holiday Eggnog Bread
Yield: 12 servings
Ingredients
- 2 eggs
- 1 cup eggnog
- 1/2 cup butter, melted
- 2 teaspoons rum extract
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg, ground
- 1/2 cup pecans, chopped
- 1/2 cup red and green candied cherries, chopped
Instructions
- Heat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.
- In a large bowl, beat eggs, add sugar, eggnog, butter, rum extract and vanilla extract. Blend well.
- Stir in flour, baking powder, salt, nutmeg, pecans and red and green candied cherries. Mix just until blended.
- Pour into prepared loaf pan.
- Bake for 45 to 50 minutes.
