Holiday Eggnog Bread

Ingredients

  • 2 eggs
  • 1 cup eggnog
  • 1/2 cup butter, melted
  • 2 teaspoons rum extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg, ground
  • 1/2 cup pecans, chopped
  • 1/2 cup red and green candied cherries, chopped

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.
  2. In a large bowl, beat eggs, add sugar, eggnog, butter, rum extract and vanilla extract. Blend well.
  3. Stir in flour, baking powder, salt, nutmeg, pecans and red and green candied cherries. Mix just until blended.
  4. Pour into prepared loaf pan.
  5. Bake for 45 to 50 minutes.
