Holiday Rice Bread
Ingredients
Bread
- 1 1/2 cups orange juice
- 2 cups granulated sugar
- 2 eggs
- 2 teaspoons grated orange peel
- 1/2 cup butter, melted
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup cooked and cooled rice
- 3/4 cup chopped pecans
Glaze
- 1/2 cup confectioners' sugar
- 1/2 teaspoon orange zest
- 3 tablespoons orange juice
Instructions
- Heat oven to 350 degrees F. Grease and flour two 9 x 5 x 3 inch loaf pans.
- Combine orange juice, sugar, eggs, orange peel and butter.
- In a separate bowl, mix flour, baking powder, baking soda and salt.
- Add orange juice mixture to dry ingredients and mix well.
- Fold in rice and pecans.
- Pour batter into prepared pans.
- Bake for 1 hour or until a wooden pick inserted in center comes out clean.
- Cool in pans for 5 minutes, then turn out to cool.
- Combine confectioners' sugar, juice and zest.
- Drizzle over loaves when cool.
