Holiday Rice Bread

Ingredients

Bread

  • 1 1/2 cups orange juice
  • 2 cups granulated sugar
  • 2 eggs
  • 2 teaspoons grated orange peel
  • 1/2 cup butter, melted
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup cooked and cooled rice
  • 3/4 cup chopped pecans

Glaze

  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon orange zest
  • 3 tablespoons orange juice

Instructions

  1. Heat oven to 350 degrees F. Grease and flour two 9 x 5 x 3 inch loaf pans.
  2. Combine orange juice, sugar, eggs, orange peel and butter.
  3. In a separate bowl, mix flour, baking powder, baking soda and salt.
  4. Add orange juice mixture to dry ingredients and mix well.
  5. Fold in rice and pecans.
  6. Pour batter into prepared pans.
  7. Bake for 1 hour or until a wooden pick inserted in center comes out clean.
  8. Cool in pans for 5 minutes, then turn out to cool.
  9. Combine confectioners' sugar, juice and zest.
  10. Drizzle over loaves when cool.
