Festive Eggnog Cake

Festive Eggnog Cake

Yield: 15 servings

Ingredients

Cake

  • 4 large eggs
  • 1 (18.25 ounce) box French vanilla or yellow cake mix*
  • 1 (3.4 ounce) box French vanilla or vanilla instant pudding and pie filling
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 2 teaspoons rum extract
  • 1 1/2 teaspoons ground nutmeg
  • 1 2/3 cups (10 ounces) Nestlé Toll House Swirled™ Holiday Morsels, divided

Frosting

  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons butter or margarine, softened
  • 2 cups powdered sugar
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Heat oven to 350 degrees F. Grease and flour** a 13 x 9 inch baking pan.

Cake

  1. Beat eggs in large mixer bowl for 1 minute or until frothy.
  2. Add cake mix, pudding mix, water, oil, rum extract and nutmeg. Beat on high speed for 2 minutes.
  3. Stir in 1/2 cup of morsels.
  4. Spread in prepared pan.
  5. Sprinkle 1/2 cup morsels over batter.
  6. Bake for 35 to 40 minutes or until wooden pick inserted in center comes out clean.
  7. Cool completely in pan on wire rack.
  8. Spread frosting over cake.
  9. Sprinkle with remaining morsels.

Frosting

  1. Beat cream cheese and butter in small mixer bowl until smooth.
  2. Gradually beat in powdered sugar and nutmeg until smooth.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
