Lemon Love Notes

Ingredients

  • 1/2 cup butter
  • 1 cup sifted all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 eggs, beaten
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lemon peel

Instructions

  1. Mix butter, 1 cup all-purpose flour and confectioners' sugar.
  2. Press into an ungreased 8 inch square pan.
  3. Bake in moderate oven (350 degrees F) for 8 minutes or until golden.
  4. Cool in pan on rack.
  5. Combine sugar, 2 tablespoons flour and baking powder.
  6. Add eggs, lemon juice and peel. Mix well.
  7. Pour evenly over baked, cooled mixture in pan.
  8. Bake in moderate oven (350 degrees F) for 25 minutes. (Top puffs up in baking, but falls in cooling.)
  9. Cool in pan on rack and cut into 2 inch squares.
  10. Sprinkle with confectioners' sugar, if desired.
