Marin Deluxe Lemon Bars

Ingredients

Crust

  • 8 ounces unsalted butter
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Filling

  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

  1. Heat oven to 350 degrees F.
  2. Cream 8 ounces unsalted butter and 1/2 cup powdered sugar together.
  3. Stir in 2 cups all-purpose flour and 1/4 teaspoon salt. Mix well.
  4. Press into an ungreased 13 x 9 inch pan.
  5. Bake for 15 to 20 minutes, or until golden.
  6. Remove from oven and let cool slightly.
  7. Blend together 4 eggs, 2 cups granulated sugar, 1/4 cup lemon juice, 1/4 cup all-purpose flour and 1/2 teaspoon baking powder.
  8. Pour mixture over warm crust.
  9. Bake for 25 minutes and make sure center of pan is set.
  10. Sift additional powdered sugar over the top, and let cool before cutting into squares of your newest addiction!
