Orange Marmalade-Coconut Bars

Ingredients

Base

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 egg yolk
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • Sprinkle of salt
  • 1 teaspoon vanilla extract

Filling

  • 1 egg white
  • 3 eggs
  • 1/2 cup granulated sugar
  • 1 cup orange marmalade
  • 1 cup flaked coconut
  • 1 cup chopped nuts
  • 1 teaspoon baking powder
  • 1/4 cup all-purpose flour

Instructions

Base

  1. Heat oven to 350 degrees F.
  2. Cream butter and sugar until creamy.
  3. Add egg yolk, vanilla extract and dry ingredients.
  4. Put into 13 x 9 inch pan.
  5. Bake for 20 minutes.
  6. Cool.
  7. Cover with filling.
  8. Reduce oven temperature to 325 degrees F.

Filling

  1. Beat egg white and whole eggs until thick and foamy.
  2. Add sugar; fold in marmalade, coconut, nuts, baking powder and flour.
  3. Bake at 325 degrees F for 45 minutes.
  4. Cool.
  5. Make frosting of 2 cups confectioners' sugar, 4 tablespoons butter and 4 tablespoons marmalade and spread over top.
  6. Chill and cut with a sharp knife.
