Orange Marmalade-Coconut Bars
Yield: about 64 pieces
Ingredients
Base
- 1 cup butter
- 1 cup granulated sugar
- 1 egg yolk
- 2 cups sifted all-purpose flour
- 1 teaspoon baking powder
- Sprinkle of salt
- 1 teaspoon vanilla extract
Filling
- 1 egg white
- 3 eggs
- 1/2 cup granulated sugar
- 1 cup orange marmalade
- 1 cup flaked coconut
- 1 cup chopped nuts
- 1 teaspoon baking powder
- 1/4 cup all-purpose flour
Instructions
Base
- Heat oven to 350 degrees F.
- Cream butter and sugar until creamy.
- Add egg yolk, vanilla extract and dry ingredients.
- Put into 13 x 9 inch pan.
- Bake for 20 minutes.
- Cool.
- Cover with filling.
- Reduce oven temperature to 325 degrees F.
Filling
- Beat egg white and whole eggs until thick and foamy.
- Add sugar; fold in marmalade, coconut, nuts, baking powder and flour.
- Bake at 325 degrees F for 45 minutes.
- Cool.
- Make frosting of 2 cups confectioners' sugar, 4 tablespoons butter and 4 tablespoons marmalade and spread over top.
- Chill and cut with a sharp knife.
