Peachy Keen Bars

Yield: 12 servings

Ingredients

  • 1 (18.25 ounce) box white, yellow or French vanilla cake mix*
  • 1/3 cup butter (room temperature)
  • 2 large eggs, divided
  • 1 (29 ounce) can regular or light peach slices, drained
  • 8 ounces cream cheese (room temperature)
  • 1/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Spray a 9 x 13 inch pan with nonstick cooking spray.
  2. In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly.
  3. Set aside 1 1/2 cups crumbs for topping.
  4. Press the remaining crumbs on bottom of prepared pan; Bake for 10 minutes.
  5. Cut peach slices into 1 inch pieces.
  6. Spoon onto partially-baked crust.
  7. In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy.
  8. Spread over top of peaches.
  9. Sprinkle with reserved crumbs.
  10. Bake for 30 minutes.
  11. Chill at least 30 minutes before serving.
  12. Store leftovers in refrigerator.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16 ounce boxes. To compensate for the volume loss, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe.
