Pineapple Zucchini Bars

Ingredients

  • 3 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups zucchini, grated
  • 1 cup crushed pineapple, drained
  • 1 cup nuts, chopped
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cream eggs, sugar and vegetable oil.
  2. Sift flour, baking powder, baking soda and salt.
  3. Combine mixtures.
  4. Add remaining ingredients.
  5. Put into two 9 x 13 inch pans or one large sheet pan.
  6. Bake at 350 degrees F for 30 to 40 minutes.
  7. Frost with cream cheese frosting or glaze, if desired.
