Pineapple Zucchini Bars
Ingredients
- 3 eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 2 cups zucchini, grated
- 1 cup crushed pineapple, drained
- 1 cup nuts, chopped
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Cream eggs, sugar and vegetable oil.
- Sift flour, baking powder, baking soda and salt.
- Combine mixtures.
- Add remaining ingredients.
- Put into two 9 x 13 inch pans or one large sheet pan.
- Bake at 350 degrees F for 30 to 40 minutes.
- Frost with cream cheese frosting or glaze, if desired.
