Tropical Cheese Bars

Yield: 24 bars

Ingredients

Crust

  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup coconut rum
  • 3 cups all-purpose flour
  • 1 cup almonds, finely chopped

Cheese Layer

  • 24 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1/4 cup coconut rum
  • 2 cans crushed pineapple, drained
  • 1 cup coconut
  • 1 cup almonds, chopped

Instructions

Crust

  1. Cream butter, sugar and coconut rum, then beat in flour until blended.
  2. Stir in nuts.
  3. Pat into a 10 x 15 inch jellyroll pan.
  4. Bake at 350 degrees F for 10 minutes.
  5. Cool.

Cheese Layer

  1. Beat cheese, sugar, eggs and coconut rum until creamy.
  2. Stir in pineapple.
  3. Pour over baked crust.
  4. Mix nuts and coconut.
  5. Sprinkle over all.
  6. Bake at 350 degrees F for 20 minutes.
  7. Cool.
  8. Cut into bars.
