Tropical Cheese Bars
Yield: 24 bars
Ingredients
Crust
- 3/4 cup butter
- 3/4 cup brown sugar
- 1/4 cup coconut rum
- 3 cups all-purpose flour
- 1 cup almonds, finely chopped
Cheese Layer
- 24 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 3 eggs
- 1/4 cup coconut rum
- 2 cans crushed pineapple, drained
- 1 cup coconut
- 1 cup almonds, chopped
Instructions
Crust
- Cream butter, sugar and coconut rum, then beat in flour until blended.
- Stir in nuts.
- Pat into a 10 x 15 inch jellyroll pan.
- Bake at 350 degrees F for 10 minutes.
- Cool.
Cheese Layer
- Beat cheese, sugar, eggs and coconut rum until creamy.
- Stir in pineapple.
- Pour over baked crust.
- Mix nuts and coconut.
- Sprinkle over all.
- Bake at 350 degrees F for 20 minutes.
- Cool.
- Cut into bars.
