Tropical Fruit Bars

Ingredients

  • 1 (20 ounce) can crushed pineapple, drained
  • 1 cup all-purpose flour
  • 1/3 cup butter, melted
  • 1/4 cup + 1/3 cup sliced (not slivered) almonds
  • 1/4 cup + 1/3 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup flaked coconut

Instructions

  1. Drain pineapple. Combine flour, butter, 1/4 cup chopped almonds, and 1/4 cup sugar until crumbly.
  2. Press into a 9 inch square pan.
  3. Bake at 350 degrees F for 12 minutes.
  4. Beat cream cheese, egg, 1/3 cup sugar, vanilla extract and pineapple.
  5. Pour over crust.
  6. Top with coconut and 1/3 cup almonds.
  7. Cool on wire rack.
  8. Refrigerate for at least 2 hours before cutting into bars.
  9. Return to oven and continue baking for an additional 35 to 40 minutes.
  10. Cool on a wire rack.
