Tropical Fruit Bars
Ingredients
- 1 (20 ounce) can crushed pineapple, drained
- 1 cup all-purpose flour
- 1/3 cup butter, melted
- 1/4 cup + 1/3 cup sliced (not slivered) almonds
- 1/4 cup + 1/3 cup granulated sugar
- 8 ounces cream cheese, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup flaked coconut
Instructions
- Drain pineapple. Combine flour, butter, 1/4 cup chopped almonds, and 1/4 cup sugar until crumbly.
- Press into a 9 inch square pan.
- Bake at 350 degrees F for 12 minutes.
- Beat cream cheese, egg, 1/3 cup sugar, vanilla extract and pineapple.
- Pour over crust.
- Top with coconut and 1/3 cup almonds.
- Cool on wire rack.
- Refrigerate for at least 2 hours before cutting into bars.
- Return to oven and continue baking for an additional 35 to 40 minutes.
- Cool on a wire rack.
