Zucchini Cocoa Brownies
Ingredients
Brownie
- 2 cups grated zucchini
- 1/2 cup chopped nuts
- 2 teaspoons vanilla extract
- 1/2 cup oil
- 2 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1/2 cup cocoa
- 1 egg, beaten
Chocolate Icing
- 1/3 cup butter, melted
- 2 squares chocolate
- 1 1/2 cups confectioners sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
Instructions
Brownie
- Heat oven to 350 degrees F. Grease and flour* a 13 x 9 inch baking pan.
- Combine zucchini, nuts, vanilla extract, oil and eggs.
- Add remaining ingredients and mix well.
- Bake prepared pan for 40 minutes.
- Frost while hot.
Chocolate Icing
- While brownies are in the oven, put butter, chocolate and egg in double boiler over low heat and stir until melted.
- Add vanilla extract and sugar and mix well, while still over hot water.
- Spread on brownies while still hot.
