Zucchini Cocoa Brownies

Ingredients

Brownie

  • 2 cups grated zucchini
  • 1/2 cup chopped nuts
  • 2 teaspoons vanilla extract
  • 1/2 cup oil
  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1/2 cup cocoa
  • 1 egg, beaten

Chocolate Icing

  • 1/3 cup butter, melted
  • 2 squares chocolate
  • 1 1/2 cups confectioners sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract

Instructions

Brownie

  1. Heat oven to 350 degrees F. Grease and flour* a 13 x 9 inch baking pan.
  2. Combine zucchini, nuts, vanilla extract, oil and eggs.
  3. Add remaining ingredients and mix well.
  4. Bake prepared pan for 40 minutes.
  5. Frost while hot.

Chocolate Icing

  1. While brownies are in the oven, put butter, chocolate and egg in double boiler over low heat and stir until melted.
  2. Add vanilla extract and sugar and mix well, while still over hot water.
  3. Spread on brownies while still hot.
