Oatmeal Raisin Cookies

Oatmeal Raisin Cookies

Yield: about 2 dozen cookies

Ingredients

  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup Sunsweet Lighter Bake
  • 3 tablespoons butter (optional)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups quick-cooking oats
  • 3/4 cup raisins

Instructions

  1. Heat oven to 375 degrees F. Coat cookie sheets with cooking spray; set aside.
  2. Beat together sugars, Lighter Bake, (butter, if desired), egg and vanilla extract.
  3. Combine flour, baking soda, cinnamon, baking powder and salt; stir into Lighter Bake mixture.
  4. Stir in oats and raisins.
  5. Drop by rounded tablespoons onto prepared cookie sheets.
  6. Bake for 8 to 9 minutes, or until edges begin to brown.
  7. Cool on racks.
