Soft, Chewy Oatmeal-Raisin Cookies

Make the batter the day before you bake the cookies.

Yield: approximately 60 cookies

Ingredients

  • 1 cup granulated sugar
  • 1 cup shortening
  • 1 cup raisins
  • 1 cup water
  • 2 eggs
  • 2 cups self-rising flour
  • 1 1/2 cups quick oats
  • 1/4 teaspoon baking soda

Instructions

  1. Cream sugar and shortening together by hand.
  2. Meanwhile cook raisins in the water until there are 5 tablespoons of water remaining. Cool.
  3. Mix flour, baking soda, oats and raisins together.
  4. Add eggs and the 5 tablespoons of water from the cooked raisins; mix well.
  5. Cover and refrigerate the batter overnight.
  6. The next day, heat the oven to 350 degrees F. Grease a cookie sheet.
  7. Drop teaspoons of the batter onto the prepared cookie sheet.
  8. Bake for approximately 13 minutes.
  9. Grease the cookie sheet again before dropping each batch of cookies onto the sheet.
  10. Cool completely before storing.
