Chocolate Fudge Meringues
Yield: 24 cookies
Ingredients
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 2 cups confectioners' sugar
- 1/2 cup unsweetened cocoa
- 1 ounce semisweet chocolate, finely chopped
Instructions
- Heat oven to 300 degrees F. Line cookie sheets with parchment or aluminum foil.
- In a medium size bowl, beat egg whites until foamy.
- Add cream of tartar and salt; beat to soft peaks.
- Beat in sugar gradually, beating until mixture forms stiff, shiny peaks.
- Fold in cocoa; fold in chopped chocolate.
- Drop mixture by tablespoons onto prepared cookie sheets.
- Bake until cookies feel crisp when touched, 20 to 25 minutes.
- Cool in pans on wire racks.
