Trail Drive and Bunkhouse Milk Gravy

  • 2 tablespoons meat drippings, bacon drippings, or lard
  • 3 tablespoons unbleached all-purpose flour
  • 1 (12 ounce) can evaporated milk
  • Salt to taste


  1. In a large skillet, heat the drippings over medium heat.
  2. Stir in the flour and cook for 2 to 3 minutes, until the flour turns golden.
  3. Add the milk and half a can of water.
  4. Cook, stirring, until the gravy is smooth and thickened.
  5. Season to taste with salt and pepper and serve over biscuits.
