Banana Nut Bread

Ingredients

  • 10 ounces butter
  • 26 ounces granulated sugar
  • 9 ounces (about 5) eggs
  • 26 ounces bananas, mashed
  • 2 pounds all-purpose flour
  • 4 tablespoons baking powder
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 8 ounces pecans or walnuts, chopped
  • 3/4 cup milk

Instructions

  1. Heat oven(s) to 350 degrees F. Grease four 9 x 5 x 2 3/4 inch loaf pans.
  2. Cream butter and sugar on medium speed for 5 minutes, using flat beater.
  3. Add eggs to creamed mixture. Beat for 2 minutes.
  4. Add bananas. Beat for 1 minute.
  5. Combine dry ingredients and nuts. Add dry ingredients and milk to creamed mixture. Mix on low speed for 1 minute.
  6. Divide batter evenly among four prepared loaf pans.
  7. Bake for 50 minutes.
  8. Cut 16 slices per loaf.
