Oatmeal Cookies

Ingredients

  • 1 1/4 pounds (5 sticks) unsalted butter, softened
  • 3 cups brown sugar, packed
  • 3 cups granulated sugar
  • 6 eggs
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 5 1/2 cups sifted all-purpose flour
  • 6 cups quick oats, uncooked
  • 2 tablespoons vanilla extract
  • 1 tablespoon allspice
  • 1 tablespoon grated orange peel
  • 2 pounds raisins or dates

Instructions

  1. Cream butter and sugar; add eggs and beat until well blended.
  2. Beat in salt, baking soda, vanilla extract, allspice and orange peel.
  3. Add flour, a little at a time, and mix well.
  4. Add raisins or dates and blend well.
  5. Chill dough.
  6. Heat oven to 350 degrees F. Lightly grease cookie sheets.
  7. Drop chilled dough by teaspoonsful onto the prepared cookie sheets.
  8. Bake for 12 to 15 minutes.
