Raisin-Chip Oatmeal Cookies

Ingredients

  • 2 cups butter or margarine, softened
  • 1 2/3 cups granulated sugar
  • 1 2/3 cups packed brown sugar
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 4 cups all-purpose flour
  • 2 1/2 cups quick-cooking oats
  • 2 1/2 cups old-fashioned oats
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 cups (24 ounces) semisweet chocolate chips
  • 3 cups coarsely chopped nuts
  • 2 cups raisins
  • 1 cup flaked coconut

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large mixing bowl, cream butter and sugars.
  3. Add eggs, one at a time, beating well after each addition.
  4. Beat in vanilla extract.
  5. Combine dry ingredients; gradually add to the creamed mixture.
  6. Stir in chocolate chips, nuts, raisins and coconut.
  7. Drop by heaping tablespoonsful 2 inches apart onto ungreased baking sheets.
  8. Bake for 12 to 14 minutes or until golden brown.
  9. Remove to wire racks to cool.
