Round Steak
Yield: 100 servings
Ingredients
- 32 pounds round steak
- 1 pound all-purpose flour
- 1 1/2 pounds fat
- 3 pounds onion, peeled and chopped
- 2 pounds celery, chopped
- 6 pounds 9 ounces tomato puree (a No. 10 can)
- 2 gallons beef stock
- 5 ounces salt
- 2 teaspoons pepper
Instructions
- Cut round steaks into 100 servings. Dip into flour and brown in the fat.
- Sauté onions and celery in fat.
- Combine other ingredients and pour over steak pieces.
- Bake at 350 degrees F for 3 hours or longer.
