Cole Slaw
Traditional oil and vinegar style cole slaw with the addition of red and green peppers.

Ingredients
- 1 small head cabbage (1 pound), thinly sliced
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 2 tablespoons chopped pimento or red bell pepper
- 1/2 cup cider vinegar
- 3 tablespoons vegetable oil
- 1/2 cup Equal Spoonful*
- 1 teaspoon celery seed
- 1/2 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Combine cabbage, green bell pepper, onion and pimento in medium bowl.
- Whisk together remaining ingredients.
- Toss dressing and vegetable mixture to coat.
- Refrigerate, covered, for at least 2 hours to allow flavors to blend.
Notes
* May substitute 12 packets Equal sweetener
Use packaged shredded cabbage to make preparation even easier.
