L.A. Cornbread

This sweet, cake-like corn bread is served at family restaurants in Los Angeles. I'm not one for regular cornbread. I need my cornbread enhanced with sweetness, and this fits the bill perfectly!

L.A. Cornbread recipe

Ingredients

  • 1 box Jiffy yellow cake mix
  • 1 box Jiffy cornbread mix

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 x 13 inch baking pan.
  2. In separate bowls*, mix yellow cake mix and cornbread mix according to instructions on the boxes.
  3. Blend both prepared mixes together.
  4. Turn into a greased 9 x 13 inch baking pan.
  5. Bake for 30 to 35 minutes, or until cornbread springs back when lightly touched.

Notes

* Do not try to mix all the ingredients in one bowl. For some reason, this will not work, and you will come out with cornbread that doesn't rise well.
