Firecracker Casserole

Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 can black beans, rinsed and drained
  • 1 to 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 4 (8 inch) flour tortillas
  • 1 can mushroom soup
  • 1 can Ro*Tel, undrained
  • 1 cup Cheddar cheese, shredded

Instructions

  1. In a skillet, cook the ground beef and onion, drain.
  2. Add beans, chili powder and salt.
  3. Transfer to a greased baking dish. Arrange the tortillas on top.
  4. Combine the soup and Ro*Tel and pour on top of the tortillas.
  5. Sprinkle with cheese.
  6. Bake uncovered at 350 degrees F for 25 to 30 minutes.
