Ingredients

Zesty Fat Free Marinade

  • Juice of 1/2 lemon
  • 1 garlic clove, finely chopped
  • 2 tablespoons white wine
  • 1 tablespoon lemon zest
  • 2 teaspoons tarragon vinegar
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon freshly ground pepper

Garlic-Wine Marinade

  • 1/4 cup balsamic vinegar
  • 1/4 cup Marsala wine
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons chopped fresh basil or 1 tablespoon dried
  • 1/4 teaspoon pepper
  • 4 garlic cloves, minced

Rosemary-Thyme Marinade

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 garlic cloves, pressed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon lemon zest

Ginger-Soya Marinade

  • 1/4 cup chopped green onion
  • 1/4 cup toasted sesame seeds
  • 1/4 cup soy sauce
  • 1/4 cup Marsala wine
  • 2 tablespoons honey
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger

Instructions

  1. Zesty Fat Free Marinade: Combine ingredients and marinate fish or chicken.
  2. Garlic-Wine Marinade: Combine ingredients and marinate beef or chicken.
  3. Rosemary-Thyme Marinade: Combine ingredients and marinate chicken.
  4. Ginger-Soya Marinade: Combine ingredients and marinate beef or chicken.
