Tamale Casserole
This will be one of the easiest tamale casseroles you will ever make.
Yield: 13 x 9 inch casserole
Ingredients
- 1 pound ground beef
- 1 yellow onion, diced
- 1 can pinto beans, rinsed and drained
- 1 can whole kernel corn, drained
- 1/3 cup water
- 1 box corn muffin mix
- 1 can red or green enchilada sauce
- 1 teaspoon Mexican oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Mexican style cheese, grated
- Garnishes: diced red onion, diced tomato, sour cream, lime wedge
Instructions
- Heat oven to 350 degrees F. Spray a 13 x 9 inch baking dish with nonstick spray.
- Sauté ground beef and onion in a large skillet until ground beef is cooked through. Drain excess grease.
- In a large bowl, combine all ingredients except cheese and garnishes.
- Add to the prepared baking dish. Sprinkle the cheese over the top.
- Bake for 30 to 35 minutes.
- Garnish as desired.
