Aunt Audrey's Spinach Casserole

A treasured recipe from my Aunt Audrey who was a wonderful cook. It has been a family favorite for over 40 years, also enthusiastically received at company dinners and church potlucks!

Ingredients

Spinach Mixture

  • 2 (10 ounce) packages frozen spinach, cooked in unsalted water, thoroughly drained, then cooled
  • 2 cups sour cream or non-dairy sour cream
  • 1 cup shredded Cheddar Cheese or non-dairy Cheddar-style shredded cheese
  • 1 envelope dry onion soup mix, such as Lipton's

Buttered Bread Cubes

  • 1/4 cup margarine or butter, melted
  • 1 1/2 cups large (1/2 to 3/4-inch) white bread cubes*

Instructions

  1. Preheat oven to 350 degrees F.
  2. Lightly grease a 1 1/2-quart baking dish.
  3. While spinach cools, prepare Buttered Bread Cubes by lightly tossing bread cubes in the melted margarine or butter.
  4. Combine cooled spinach, sour cream, shredded cheese and onion soup mix.
  5. Spoon spinach mixture into prepared baking dish, then top with Buttered Bread Cubes.
  6. Bake in preheated oven for 30 minutes, or until bubbly hot throughout and bread cubes are lightly toasted.

Notes

* Aunt Audrey used day-old hamburger or hot dog buns.
