California-Style Avocado Sandwiches
A co-worker while I was in college shared the ingredients for this gourmet sandwich which she had enjoyed while vacationing in California. Still as good today as it was nearly 50 years ago!
Yield: 8 sandwiches
Ingredients
- 8 thick slices whole grain bread
- 1/2 cup mayonnaise
- 2 cups alfalfa sprouts or spicy sprout blend (alfalfa + radish)
- 2 to 3 ripe California avocados, pitted, peeled and sliced
- 2 to 3 large tomatoes, sliced
- 1/2 sweet onion, thinly sliced
- Salt (optional)
- 8 ounces Cheddar or Monterey Jack cheese, sliced
Instructions
- Turn the oven on to "Broil." Set aside a large baking sheet.
- Spread each slice of the bread with a thin layer of mayonnaise. Top with a generous handful of sprouts (about 1/4 cup), 2 tomato slices, 3 to 4 avocado slices, several onion rings, a sprinkle of salt, if desired and a slice of cheese.
- Arrange the prepared sandwiches on the baking sheet.
- Position the baking sheet in the center of the preheated oven. Watching carefully, broil for several minutes, until the cheese is melted.
- Serve hot.
