California-Style Avocado Sandwiches

A co-worker while I was in college shared the ingredients for this gourmet sandwich which she had enjoyed while vacationing in California. Still as good today as it was nearly 50 years ago!

Yield: 8 sandwiches

Ingredients

  • 8 thick slices whole grain bread
  • 1/2 cup mayonnaise
  • 2 cups alfalfa sprouts or spicy sprout blend (alfalfa + radish)
  • 2 to 3 ripe California avocados, pitted, peeled and sliced
  • 2 to 3 large tomatoes, sliced
  • 1/2 sweet onion, thinly sliced
  • Salt (optional)
  • 8 ounces Cheddar or Monterey Jack cheese, sliced

Instructions

  1. Turn the oven on to "Broil." Set aside a large baking sheet.
  2. Spread each slice of the bread with a thin layer of mayonnaise. Top with a generous handful of sprouts (about 1/4 cup), 2 tomato slices, 3 to 4 avocado slices, several onion rings, a sprinkle of salt, if desired and a slice of cheese.
  3. Arrange the prepared sandwiches on the baking sheet.
  4. Position the baking sheet in the center of the preheated oven. Watching carefully, broil for several minutes, until the cheese is melted.
  5. Serve hot.
