Coconut-Pineapple Limeade
Coconut + Pineapple = Exquisite!
Yield: just under 1 gallon (not including ice cubes)
Ingredients
- 1 (13 to 14 ounce) can unsweetened coconut milk (look for lower fat content, such as 11g per serving)
- 1 (8 ounce) can crushed pineapple, undrained
- 1/4 cup agave nectar or honey
- 1 (12 ounce) can frozen 100% pineapple juice concentrate
- 1 (12 ounce) can frozen limeade concentrate
- 6 (12 ounce) cans water
- Ice cubes
Instructions
- In a blender container, combine the coconut milk, undrained crushed pineapple and agave nectar (or honey); blend until smooth, then pour the mixture into a large pitcher.
- In the unrinsed blender container, combine the two frozen juice concentrates and three cans of water; blend, then add to the coconut-pineapple mixture in the pitcher. Stir in the remaining three cans of water.
- To serve, fill tall tumblers with ice cubes. Pour drink over the ice.
