LuAnn's Guacamole Salad
My fresh Guacamole Salad is a favorite at our house! It’s a perfect complement to Southwestern or Mexican main dishes.
Ingredients
Dressing
- 2 tablespoons olive oil
- 1 teaspoon lime juice
- 3 or 4 dashes hot pepper sauce
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon black pepper
Salad
- 1 head romaine lettuce, leaves separated and rinsed thoroughly, patted dry, then finely shredded
- 1/4 cup fresh minced cilantro
- 3 large tomatoes, diced
- 2 large ripe avocados, pitted, peeled, then cubed
- 1/2 cup chopped sweet onion
Last Minute Add-in
- Several handsful of tortilla chips, coarsely broken
Instructions
- In a small bowl, whisk the dressing ingredients together; set aside.
- In a large bowl, combine the lettuce, cilantro, tomatoes, avocados and onions. Give another quick whisk to the dressing, then drizzle it over the salad. Lightly toss with a large spoon until the salad ingredients are mixed and evenly coated with the dressing.
- For a pretty presentation, coarsely break the tortilla chips and sprinkle them in a ring around the outer edge of the salad. Just before serving, lightly toss the chips into the salad.
Notes
Ideally, Guacamole Salad should be prepared shortly before serving. If allowed to stand too long, the lettuce will begin to wilt and the cubes of avocado to darken.
