Mother's Cranberry Salad

This recipe was in my mother’s personal collection of recipe favorites, many written in her own hand or by friends or family who had shared their recipes. This recipe came from her friend, Mrs. Leffler. Mother made it often.

Ingredients

Step 1

  • 3/4 cup pineapple juice (drained from the pineapple)
  • 3/4 cup water
  • 1 tablespoon lemon juice
  • 1 small package cherry-flavored Jell-O
  • 1 cup sugar

Step 2

  • 1 cup crushed pineapple, drained
  • 1/2 cup ground raw cranberries
  • 1/2 cup chopped celery
  • 1/2 cup chopped walnuts
  • Grated zest of 1 orange

Instructions

Step 1

  1. In a small saucepan, combine the pineapple juice, water, and lemon juice and bring to a boil over high heat.
  2. Remove from the stove and stir in the jello and sugar, continue stirring until both are completely dissolved.
  3. Refrigerate until partially thickened.

Step 2

  1. Meanwhile, prepare the fruit, celery, nuts, and orange zest.
  2. Lightly spray a mold or pan with no-cook cooking spray (of course, Mother didn't have this, she used a bit of shortening).
  3. Fold the fruits etc. into the partially thickened Jell-O, then pour into the prepared mold or pan.
  4. Refrigerate overnight.
