Raspberry Glazed Turkey Tenderloins
Yield: 6 servings
Ingredients
- 1 cup seedless raspberry preserves
- 1/2 cup light soy sauce
- 1/4 cup olive oil
- 2 cloves minced garlic
- 2 tablespoons grated fresh ginger
- 1 1/2 teaspoons chopped fresh rosemary (optional)
- 6 (3/4 pound) turkey tenderloins
Instructions
- Whisk together preserves, soy sauce, oil, garlic and ginger; rosemary, if desired. Reserve 1/2 cup marinade.
- Place turkey in plastic bag; pour marinade over turkey. Seal and refrigerate 8 hours, turning occasionally.
- Remove turkey from marinade, discard marinade. Arrange turkey in a broiler pan coated with cooking spray.
- Bake at 425 degrees F for 25 to 35 minutes or until a meat thermometer reads 170 degrees F, basting often with reserved marinade.
- Let stand for 5 minutes before slicing.
