Raspberry Glazed Turkey Tenderloins

Ingredients

  • 1 cup seedless raspberry preserves
  • 1/2 cup light soy sauce
  • 1/4 cup olive oil
  • 2 cloves minced garlic
  • 2 tablespoons grated fresh ginger
  • 1 1/2 teaspoons chopped fresh rosemary (optional)
  • 6 (3/4 pound) turkey tenderloins

Instructions

  1. Whisk together preserves, soy sauce, oil, garlic and ginger; rosemary, if desired. Reserve 1/2 cup marinade.
  2. Place turkey in plastic bag; pour marinade over turkey. Seal and refrigerate 8 hours, turning occasionally.
  3. Remove turkey from marinade, discard marinade. Arrange turkey in a broiler pan coated with cooking spray.
  4. Bake at 425 degrees F for 25 to 35 minutes or until a meat thermometer reads 170 degrees F, basting often with reserved marinade.
  5. Let stand for 5 minutes before slicing.
