Smothered Turkey Wings

Smothered Turkey Wings is real soul food. It is a little labor-intensive, but it is well worth the effort. It is best served with mashed potatoes and green beans or other greens, such as collard.

Smothered Turkey Wings

Yield: 8 servings

Ingredients

  • 2 pounds turkey wings*
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground sage
  • 1 teaspoon dry thyme
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 2 stalks celery, chopped
  • Salt and pepper, to taste
  • 2 cups chicken or turkey broth
  • 1/2 cup Half-and-Half

Instructions

Turkey

  1. Heat the oven to 325 degrees F.
  2. Rinse the turkey under cool water, then pat dry.
  3. Combine garlic powder, onion powder, sage, thyme, salt and pepper.
  4. Rub the seasonings all over the turkey pieces.
  5. Place the flour into a large freezer bag, close and shake well to coat, then place the turkey into the bag. Close the bag, and shake until all of the turkey is coated well with the flour. Leave the excess flour in the bag.
  6. Add in vegetable oil and butter to a large skillet. Over medium heat, melt the butter and heat the oil.
  7. When the oil and butter are hot, add the turkey. Brown all surfaces of the turkey, then remove from the pan, and put the turkey into a large baking dish.
  8. Toss in all the chopped vegetables into the skillet. Season the vegetables with salt and pepper to your preference, and cook the veggies over medium heat until they are translucent.
  9. When done turn off the heat, and add the vegetables to the baking dish with the turkey, but reserve the oil and butter mixture.
  10. Cover the baking dish with aluminum foil, and bake the turkey for 2 hours at 325 degrees F.

Gravy

  1. Heat the reserved butter and oil mixture over medium heat.
  2. When the butter and mixture is hot, sprinkle in the remaining flour from the bag. Stir continuously, and let brown.
  3. Pour in the chicken broth, and stir with a whisk to prevent lumps.
  4. Add the Half-and-Half, whisking until everything is well combined.
  5. Let the gravy cook over medium heat until it starts to thicken.
  6. Remove the turkey from the oven, and uncover.
  7. Pour the gravy all over the turkey, making sure that it is all smothered, then cover.
  8. Bake for an additional 1 1/2 hours.
  9. Remove the turkey form the oven, and let stand for 10 minutes.

Notes

* Legs and thighs may also be used.
