Roasted Gingered Salmon

Ingredients

  • 4 salmon fillets, skin on
  • 3 cloves garlic, minced
  • 1 (1 1/2 inch long) piece ginger root, peeled, minced
  • 3 tablespoons reduced-sodium soy sauce
  • 1/2 teaspoon sea salt
  • 1 tablespoon minced parsley
  • 1 tablespoon minced green onion

Instructions

  1. Heat oven to 350 degrees F.
  2. Place the salmon in an 8 inch square or other small baking dish; set aside.
  3. Mix together garlic, ginger and soy; pour mixture over the salmon. Bake until just cooked through, about 20 minutes.
  4. Sprinkle with sea salt, parsley and green onion.
