Popcorn Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 3/4 cup ground popped corn
  • 2 tablespoons melted shortening
  • 3 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon salt
  • 1 egg, well beaten

Instructions

  1. Sift flour; measure and sift with baking powder, salt, and sugar.
  2. Add milk, popped corn, egg and shortening.
  3. Fill a well-oiled muffin tins 2/3 full.
  4. Bake at 425 degrees F for 25 minutes.
