Boiled Peanuts

  • Pressure Cooker

Ingredients

  • 1 pound raw, in-shell peanuts
  • 6 cups water
  • 1/3 cup salt

Instructions

  1. Wash peanuts thoroughly in cool water.
  2. Place water in a 6 or 8 quart pressure cooker. Stir in salt. Add peanuts. Close cover securely. Place pressure regulator on vent pipe.
  3. Cook for 40 minutes at 15 pounds of pressure.
  4. Let pressure drop of its own accord.
  5. Let peanuts cool in cooking water, then drain.
