Cajun Crawfish Omelet

Crawfish tails get the royal treatment with a variety of spices, cheese, green onion and mushrooms.

Cajun Crawfish Omelet

Ingredients

  • 2 large eggs
  • Splash of water
  • 1 drop hot sauce
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 dozen peeled and cooked crawfish tails
  • Green part of 1 green onion, sliced
  • 3 button mushrooms, thinly sliced
  • 1/4 teaspoon Cajun seasoning
  • 1/4 cup shredded mild Cheddar cheese
  • Chopped parsley

Instructions

  1. In a mixing bowl, combine eggs and a splash of water, then scramble.
  2. Add hot sauce, salt and pepper to taste.
  3. In a small skillet, heat butter until melted over medium heat.
  4. Add eggs and cook until bottom layer is done, approximately 4 minutes.
  5. Add crawfish, onion, mushrooms, Cajun seasoning and cheese to one side.
  6. When eggs are fully cooked and cheese has melted, fold the omelet over and serve topped with parsley.
