Cajun Hush Puppies

Cajun Hush Puppies originated in the South Louisiana Bayou Country.

Ingredients

• 1 1/2 cups cornmeal
• 1/2 cup all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 1 egg
• 1 onion, chopped
• 1 cup buttermilk
• 1 large jalapeño pepper, finely chopped (optional)

Instructions

1. Mix all ingredients.
2. Drop with a large spoon into HOT oil in a deep fat fryer. Cook until golden brown, turning with a long wooden spoon.
