Creole-Style Lentils
Prep: 15 min | Cook: 40 min | Yield: 5 1/2 cups
Ingredients
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 large onion, chopped
- 2 tablespoons butter
- 1 (16 ounce) can tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon granulated sugar
- 1/4 teaspoon pepper
- Few drops hot pepper sauce
- 1 cup lentils, cooked and drained
- Hot cooked rice (optional)
Instructions
- Saute carrots, celery and onion in hot butter in medium size saucepan until lightly browned, about 10 minutes.
- Add tomatoes, salt, sugar, pepper, pepper sauce and lentils. Cover; simmer for 30 minutes, stirring occasionally.
- Serve over rice.
