Creole-Style Lentils

Ingredients

  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 large onion, chopped
  • 2 tablespoons butter
  • 1 (16 ounce) can tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon pepper
  • Few drops hot pepper sauce
  • 1 cup lentils, cooked and drained
  • Hot cooked rice (optional)

Instructions

  1. Saute carrots, celery and onion in hot butter in medium size saucepan until lightly browned, about 10 minutes.
  2. Add tomatoes, salt, sugar, pepper, pepper sauce and lentils. Cover; simmer for 30 minutes, stirring occasionally.
  3. Serve over rice.
