Dirty, Dirty Rice

Dirty, Dirty Rice is made with chicken livers and sausage and, of course, the trinity of Louisiana cooking is also in the mix.

Dirty, Dirty Rice

Yield: 8 servings

Ingredients

  • 1 pound chicken livers, chopped
  • 1 pound bulk sausage (mild or hot)
  • 1/4 cup butter
  • 1 cup chopped onion
  • 1 cup celery, chopped
  • 1 bunch green onions, chopped
  • 1 yellow onion, diced
  • 2 tablespoons chopped parsley
  • 2 cloves garlic, minced
  • 1/2 green or red bell pepper, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 can chicken broth
  • 3 cups cooked rice

Instructions

  1. Saute chicken livers and sausage until browned. Remove from skillet and set aside.
  2. Melt butter in skillet. Add onion, celery, green onions, yellow onion, parsley, garlic and bell pepper. Saute until tender.
  3. Add Worcestershire sauce, Cajun seasoning, cayenne pepper, chicken livers and sausage. Mix well.
  4. Stir in salt, pepper and chicken broth. Cook rice according to package directions and add to sausage mixture. Heat on medium heat, stirring constantly.
