Bubble and Squeak
Bubble and Squeak is so named for the sounds it makes as the dish cooks, due to the amount of water in the cabbage. This is also known as Potatoes and Cabbage.
Yield: 4 to 6 servings
Ingredients
- 1 tablespoon butter
- 4 strips bacon, chopped
- 1 onion, finely sliced
- 1 garlic clove, chopped
- 2 cups leftover boiled cabbage, shredded
- 2 cups cold leftover mashed potato or cold crushed boiled potatoes
Instructions
- Melt butter in a nonstick pan. Add chopped bacon. As it begins to brown, add onion and garlic.
- Add cabbage and let it color slightly, about 5 to 6 minutes.
- Add potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan. Cook until browned on the bottom, then turn and brown again.
Notes
The mixture may be formed into small cakes and cooked as patties. Simply cook the bacon before adding to the remaining ingredients.
