Peach Salad

Ingredients

• 2 small boxes peach gelatin
• 3 1/2 cups boiling water
• 4 cups chopped canned peaches
• 1 cup syrup from canned peaches
• 1/2 cup granulated sugar
• 2 tablespoons all-purpose flour
• 1 egg, slightly beaten
• 1 egg, slightly beaten
• 3 ounces cream cheese, softened
• 1 cup whipping cream, whipped
• 1 cup chopped nuts
• 1/2 cup miniature marshmallows
• 1/2 cup shredded Cheddar cheese

Instructions

1. Dissolve gelatin in water; chill until it begins to set.
2. Fold in peaches; turn into a 3 quart mold.
3. Chill until firm.
4. In top of double boiler, combine peach syrup, sugar, flour and egg. Cook over simmering water. Stir constantly until thickened. Cool.
5. Fold in softened cream cheese and whipped cream.
6. Add nuts and marshmallows. Spread on gelatin; sprinkle cheese on top.
7. Chill for several hours.
