Spiced Peach Salad

  • 2 small boxes lemon flavored gelatin
  • 2 cups boiling water
  • 1 (29 ounce) jar spiced peaches
  • 1 (4 ounce) container whipped cream cheese
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped walnuts


  1. Dissolve gelatin in boiling water.
  2. Drain peaches, reserving syrup. Add enough additional water to reserved syrup to make 2 cups liquid. Add to dissolved gelatin; chill until partially set.
  3. Pour 1 1/2 cups gelatin into 10 x 6 x 1 3/4-inch baking dish. Leave remaining gelatin at room temperature.
  4. Chill gelatin in baking dish until almost set.
  5. Halve peaches, discarding pits.
  6. Combine cream cheese, celery and nuts; fill peach cavities.
  7. Arrange filled peach halves on the almost-set gelatin.
  8. Gently spoon remaining gelatin over and around peaches.
  9. Chill until firm, several hours or overnight.

Makes 8 servings.
