Fruited Brown Rice Salad

Ingredients

  • 1 (16 ounce) can fruit cocktail, in juice or syrup, drained, reserving 1/4 cup fruit cocktail juice or syrup from the can
  • 1 cup brown rice
  • 1 tomato, diced
  • 1 cup sliced celery
  • 1/2 cup sliced green onions
  • 2 tablespoons red wine vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon tarragon
  • 1/8 teaspoon garlic powder

Instructions

  1. Cook rice according to package directions; chill thoroughly.
  2. Toss rice with fruit cocktail, tomato, celery and green onions.
  3. Combine reserved fruit cocktail liquid with vinegar, oil, mustard, tarragon and garlic powder. Stir into rice mixture; chill to blend flavors.
