Smoked Salmon Pasta Salad

Yield: 4 main dish servings

Ingredients

  • 2 1/2 cups medium shell macaroni
  • 1/4 cup lemon juice
  • 3 tablespoons snipped fresh dill weed
  • 4 teaspoons Dijon-style mustard
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons peanut oil
  • 6 ounces skinned, boned and flaked hot smoked salmon
  • 1/2 cup coarsely chopped cucumber
  • 1/4 cup snipped fresh chives

Instructions

  1. Cook pasta according to package directions. Drain, then rinse with cold water, and drain well. Return to saucepan; set aside.
  2. In a small bowl whisk together the lemon juice, dill weed, mustard, sugar, salt and pepper.
  3. Slowly add peanut oil in a thin steady stream, whisking constantly.
  4. Add the dressing to pasta along with the salmon, cucumber and chives. Toss mixture to coat well.
  5. Serve immediately.
