Open Face Avocado Sandwiches

Ingredients

  • 1 package shredded frozen hash browns
  • 1 large avocado, peeled and sliced
  • Shredded Cheddar cheese
  • 3 tablespoons oil
  • Salt and pepper to taste
  • 1 large tomato

Instructions

  1. Fry hash browns in hot oil until browned. Season with salt and pepper. Remove from skillet and place on broiler pan.
  2. Make layers of tomato and avocado strips on each potato patty. Top with cheese then place under broiler for 3 to 4 minutes or until cheese melts.
  3. Cut each in half.
