Ingredients

  • 1 cup avocado salad from Avocado Grain Bowl
  • 1 ripe fresh Hass avocado*, halved, pitted, peeled and cubed
  • 8 (6 inch) corn tortillas
  • 1 1/3 cups black beans
  • 24 shrimp
  • 1/4 cup chopped cilantro

Instructions

  1. Heat oven to 350 degrees F.
  2. Make avocado salad. If already made, drain.
  3. Add fresh avocado, mix and set aside.
  4. Wrap tortillas in foil. Bake for about 10 minutes or until hot.
  5. In a small microwavable bowl, heat the beans until warm; mash with a potato masher.
  6. To serve, spread each warmed tortilla with 2 tablespoons mashed beans, top with 3 shrimp and 1/2 cup avocado salad.
  7. Sprinkle with chopped cilantro.

Notes

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
