Cheese Scalloped Potatoes and Carrots

Ingredients

Potatoes and Carrots

  • 2 cups boiling water
  • 2 teaspoons salt
  • 5 cups potatoes, sliced
  • 1 1/2 cups chopped onion
  • 2 cups carrots, sliced

Cheese Sauce

  • 3 tablespoons butter, melted
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • Pepper, to taste
  • 1 1/2 cups milk
  • 1 cup grated Cheddar cheese

Instructions

  1. Heat oven to 375 degrees F.

Potatoes and Carrots

  1. Cook for 5 minutes and drain.

Cheese Sauce

  1. Add flour and salt to margarine. Add pepper, milk and cheese. Alternate layers of vegetables and cheese sauce. Cover with 1/2 cup grated Cheddar cheese.
  2. Bake for 1 hour.
