Corn Fritter Cakes

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 eggs
  • 1 cup cream-style corn
  • 1 tablespoon melted shortening

Instructions

  1. Sift flour; measure; sift again with baking powder, salt and pepper.
  2. Beat eggs well; add corn; mix; stir in flour and shortening.
  3. Drop by tablespoonsful into hot shortening 1/4 inch deep in frying pan.
